Quote of the Day


White Chicken Chili

And another terrific recipe from my sister.

Soak overnight:

3 C great northern beans

4 C water
3 chicken breast

Fish out the chicken (save the water), shred the chicken

Saute in a big soup pot
1 T olive oil
3 cloves garlic, minced
1 onion, diced

Add and simmer for one hour:
rinsed and drained beans
chicken water
chicken broth or water to cover beans

1 C chopped artichoke hearts
12 oz grated monterey jack cheese
2 t cumin
1 t oregano
1/4 t cloves
1/8 t cayenne
1/4 C mild green chilis
shredded chicken

Serve with green salad and corn bread.
