Cumin Black-eyed Peas

Super yummy, nutricious, and vegan if you wish.



Cumin Black-eyed Peas


In a deep skillet, saute:

Olive oil
1 t whole cumin
4-6 cloves garlic, mashed
2 T tomato paste

Add:
2 cans (or 1 bag of frozen) black-eyed peas
1 C water or chicken broth
chopped spinach (optional)
diced tomatoes (optional)
1/2 Tb dried thyme
Salt and pepper, to taste

Serve garnished with sour cream.
