a wee comment about bread recipes

I need to tell you that when I switched over to locally ground flour, all my bread recipes started to need more water. I have a friend with a bread science book, perhaps she will write a guest post and explain why. In the meantime, if the dough looks to dry, follow your instincts and add more water. Don't obey the recipe on blind faith.
