Cream of Arthichoke & Garbanzo

I found this over at Farmgirl Fare who, in addition to posting yummy recipes, has been posting adorable pics of baby lambs recently.

Artichoke Garbanzo Soup

Sauté in large pot:
2 T olive oil
4 chopped onions
4 to 6 cloves of chopped garlic

4 C chicken stock
1 cans garbanzo beans, drained & rinsed
2 cans artichokes (packed in water), drained, rinsed & chopped up a bit

Cook for about 30 minutes and then puree in blender.

1 C heavy cream
salt & pepper

Top with some chopped green herb and some sour cream.
