scalloped potatoes

These are so easy. I can't believe I ever served my family that horrid boxed stuff. Never again.

Scalloped Potatoes

Boil together for 10 minutes:
8-10 small red or yellow potatoes, thinly sliced
1 small onion, thinly sliced
3 T butter
2 C milk
½ C feta
1 C mixed shredded cheese
1 t thyme
1 t salt
½ t pepper

Pour into shallow baking dish.

Bake at 350-375 for 30 minutes or until brown.

Do you boil all the ingredients together before cooking - or just all the potatoes. I was a little confused there.

Looking at the list of ingredients, feta is the only thing I don't have. Is there something else I could use in place of the feta do you think?
