bran muffin batter

Per Sandy's request, here is the fantabulous bran muffin recipe from my sister.

bran muffins

Combine and let cool:
2 C boiling water
2 C all-bran

Cream together:
2 1/2 C sugar
1 C shortening


4 beaten eggs
1 quart buttermilk

bran mixture
3 C flour
5 t baking soda
1 t salt
4 C all-bran
nuts and raisins if you wish

Bake at 400 for 15 minutes for regular muffins, 20+ minutes for jumbo. Add some minutes if you are starting with cold batter.

Keeps 6 weeks in fridge. I store it in one of those big glass jars.
